Toasting bread undergoes a Maillard reaction where sugar bonds with wheat proteins creating aromatic compounds that makes it taste and smell delicious.

Excess sugar molecules from the bloodstream can react with skin proteins to create unstable compounds to stable byproducts called AGEs (Advanced Glycation End-products).
